It's the summer and I usually try some new foods. This summer I've been slacking though and haven't really done as much. After realizing that I gained ten pounds from March 2015 to October 2015 I have somewhat realized that I need to make some lifestyle changes. My goal for the rest of the year is to try to eat healthier and I'm trying to make that change this week. So yesterday I went to Kroger and purchased an eggplant for $0.98. I've never had eggplant before today and I was pleasantly surprised at how good it was.

I Lace 'Em Up Every Night For Guys Like You: Chicken Curry
This recipe was inspired by this video.
During the summer I like to try random recipes. Why? 1.) Because I have the time and 2.) I like to eat. My Mom is always saying I'm eating some different types of food and it's true. This was no exception for my household.
Ingredients
1-1/4 pound boneless, skinless chicken breasts cut into 1/4 inch strips
Salt
2-1/2 teaspoons curry powder (divided)
3 tablespoons olive oil (divided)
1 medium yellow onion, chopped
2 teaspoons of minced garlic
1 tablespoon ginger
2 cups low sodium chicken broth
1 tablespoon cornstarch
2 teaspoons sugar
1-1/2 frozen peas
1/4 cup plain low fat (2%) Greek yogurt (do NOT use nonfat)
1/2 cup chopped fresh cilantro

How To Be A Housewife: Lime Chicken
So with school being out and me feeling bored, my domestic side has kicked in. Therefore after voting today I decided to head to the grocery store and buy some chicken breast to cook something. I found a recipe and when I arrived home I altered it to my taste.
Ingredients
Ingredients
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried thyme
- 1/4 teaspoon parsley
- 4 boneless, skinless chicken breast halves
- 1/4 (2 tablespoons) stick butter
- 3/4 teaspoon minced garlic
- 1 lime, cut in half
Directions*
*Usually I include pictures for each of my directions but today I was kind hungry of in a rush.
- In a small bowl, mix together your salt, black pepper, cayenne pepper, paprika, dried thyme, and parsley. Sprinkle your, I guess we'll call it dry rub, onto both sides of the chicken breast halves. When I made mine I rubbed it in with my fingers.
- Turn a stove cap onto medium-high heat and place a large skillet onto it. When the skillet is hot take the 1/4 stick of butter and allow it to melt in by spreading it around the skillet using a wooden spoon. Next add your 3/4 teaspoon of minced garlic and spread it across the skillet.
- Place your chicken breast halves in the skillet. Take one of the lime halves and squeeze it onto the chicken breasts. You'll notice something like a sauce developing at the bottom of the skillet. Try to swirl it around without moving the skillet from the pan. Cook for 7 minutes and then flip the chicken breast to the other side. Take the second part of lime half and squeeze it onto the chicken breasts just like you did the first time. Cook this side for 6 minutes.
After flipping and reversingthe chicken.Remember to squeeze the second lime half on there.

My Attempt: Chicken Pot Pie
So everyone knows that I'm one of those people that becomes really domestic when I'm at home bored. When I was home for Thanksgiving I planned on making apple butter, but stuff happens. Now I'm here with an easy recipe for chicken pot pie.
Ingredients:
2 Cans of Condensed Cream of Chicken (10.5 ounces)
1.5-2 Cups Cooked and Cubed Chicken
1/2 Cup 2% Milk
2 Cups Mixed Vegetables (12 ounce bag thawed)
Crust
1 Cup biscuit mix
1 Egg
1/2 Cup 2% Milk
I got this recipe from the Campbell's Soup website and the original serving size was for four so I decided to double up on all of the ingredients which I soon discovered was unnecessary. The recipe was super easy and simple, so all of you who struggle in the kitchen don't worry.
